January 2023 pantry challenge
January 2023 marks the beginning of a new challenge. Every year Jessica over at three Rivers Homestead, find her on Instagram @threerivershomestead, puts on a pantry challenge to use things up that will soon expire, and to make room for the coming years harvest. It also helps show you what you used most and how much to have for next year.
It’s completely up to you how you do this challenge.
Do not spend any money on groceries.
Do buy just the necessities milk, eggs ext…
The new year kicks off the challenge. Some ways I am going to prepare is to meal plan and take inventory. For some of the meals I’m going to have to get creative. For instance I have two jars of banana peppers and jalapeños that I need to use up along with several bags of trail mix that the kids have picked though.
The rules that I’m creating, for myself, are:
I can use my WIC benefits. Which gives us access to fresh produce, milk, cheese, cereal ext.
Alex can still do his gas station stops. He takes a lunch, but sometimes wants a soda or energy drink. We all need a little spoiling, I just ask that he is mindful about spending.
The next few days I’ll be taking inventory and organizing my pantry. I love that this also gives me the time to wipe everything down and sanitize. Cupboards somehow managed to get crumbs, fingerprints inside and outside of the fridge, knobs get loosened, etc. It really freshens the kitchen. It also helps me feel better by starting with a clean space.
As the challenge goes on I’ll be uploading my recipes and things I’ve been using in my stories on Instagram @whimsyleo, and saving in my highlights. After the challenge ends I will try to link some stuff to this post so that you have quick access and some fun odd ball recipes or surprisingly delicious recipes at your fingertips.
